Blind Assessment: Crisply sweet-tart. Green apple, magnolia, oak, maple syrup, almond in aroma and cup. Sweet-tart structure with brisk acidity; delicate, silky mouthfeel. Almond and apple notes lead in the quiet finish.
Notes: Produced at Hacienda La Minita and processed by the honey method (skin is removed but at least some of the sticky fruit residue is allowed to dry on the bean).
