Blind Assessment: Crisply sweet, richly resonant. Red apple, almond butter, cane sugar, fresh-cut oak, lily in aroma and cup. Sweet structure with pert acidity; full, syrupy mouthfeel. The finish centers around almond, oak and crisp apple.
Notes: Produced at Finca Las Moras, a farm owned by Genuine Origin importers. Produced entirely from trees of the Parainema variety of Arabica, and processed by the yellow honey method. With all honey processing methods, some sweet pulp or fruit flesh (“honey”) is allowed to adhere to the beans during drying. In the yellow honey variation, a thin layer of pulp is allowed to dry on the beans, more than with white honey, but less than is the case with red or black honey. About Finca Las Moras: Nestled in the hills of Siguatepeque in the Comayagua department, Finca Las Moras is one of Genuine Origin’s own farms. The farm serves a dual purpose: first as a Volcafe Way training lab where our field techs and agronomists demonstrate best practices coffee farming for visiting producers. Second as a functional farm that produces coffee, experiments with different coffee varietals and tests out new processing methods.
The Parainema variety is a cultivar of the Sarchimor family of Arabica hybrids, and it caused a big stir in Honduras in 2017 when it won the Cup of Excellence, elevating its reputation in the minds of farmers and importers. This coffee is complex and multi-layered, with leading notes of orange zest, pomegranate syrup, magnolia and brown sugar. Mouthfeel is lively and full, and acidity is briskly juicy.
